Castlevania POR on hard mode with the max level 1. I would say Contra on hard mode, but I made absolutely no progress, whereas Castlevania actually gave me motivation to try.

Etrian Odyssey was (and still is) one of the harder games I've played on the DS. I still haven't beaten it, because while it would probably be pretty easy if I just went with the "hours of mindless grinding" approach, I'm taking more of the "barely snatching victory from the jaws of defeat" approach.
Things get really intense, so I have to play it in short bursts or I'll get tired. Whew!

Adding to my list, Etrian Odyssey was pretty difficult for the same reasons FFIII was difficult: old-school! (Very old-school, in fact.)

One of the most frustratingly difficult DS titles for me has to be Metroid Prime: Hunters. Being a "lefty" I found controlling Samus to be one hell of a struggle. However it was only after my interest in the game sloped off that I found out about a little product called the Thylus - its a finger-strap stylus that allows for far greater control than that of a pencil-based stylus. I still gotta' get me one. :)
