Megaman ZX had a pretty good difficulty curve. Easy levels, and then bam the end bosses could be tough!

I was going to say Castlevania: POR on Level 1 Hard, but now that I recall, I couldn't get past the second level of Contra 4 on hard. Castlevania was more of a fun sort of challenging then Contra was, however.
